Made using 100% Yamada Nishiki rice, which is the finest sake rice and is grown in Special A District of Nishioku in Yokawacho Town, Hyogo Prefecture. We polish the rice to the highest possible ratio of 38%. Through low-temperature brewing, we bring out the rich umami flavor and aroma that can only be savored from Souhana yeast, a variety that is only used for brewing Souhana.
